Is it just me or is back to school time CRAZY?! Don’t get me wrong, I love getting back to a routine and schedule as much as the next gal, but I have to admit that this year’s transition has been a little… rough. Okay, okay. I’ll admit it. It’s been more of a HOT MESS! lol. Back to school shopping gets more and more expensive each year- especially now that I have almost all my kids in school. {Anyone else feel like they spent a small fortune? I swear I spent more than I did on last year’s Christmas!} And I’m struggling getting into the swing of things again with all the different classroom newsletters, homeworks projects, parent-teacher conferences, and after school activities. So it’s really no surprise that meal planning and cooking healthy meals haven’t been happening around here. There just never seems to be enough time to cook a good healthy meal from scratch like I used to.
